Sunday Brunch for Two

Breakfast is my favorite meal of the day. On Sundays, the only day I get to sleep in, my husband likes to surprise me by making me breakfast. This is one of my favorites!
We have been huge fans of Za'atar ever since our Egyptian friends introduced us to it when we lived in the United Arab Emirates. Za'atar is a classic Middle Eastern herb and spice blend. It has become one of our go-to seasonings, mainly because it is absolutely delicious, but also because its earthy, savory flavors literally go with just about everything.
Sunday Brunch for two
4-6 large eggs
olive oil
garlic
tomatoes
spinach
Parmesan or Cheddar cheese
salt
pepper
za'atar (optional)
chili flakes (optional)
crispy bacon
INSTRUCTIONS
1. Heat a skillet over medium heat. Add oil and garlic. Fill the pan with spinach leaves and turn leaves in warm oil until they wilt. Add more spinach to the skillet and repeat the process until all of the spinach is incorporated.
2. Add the tomatoes and cook until tomatoes are warm but still firm. Season with salt and pepper.
3. Heat another skillet over medium heat. Add oil. Break eggs and slip into skillet, one at a time. Cook slowly until egg is cooked to your likening. Season with salt, pepper, za'atar, and chili flakes.
4. Place eggs on a plate and top with the wilted spinach and tomatoes. Serve with grated Parmesan or Cheddar cheese and crispy bacon!
