Roasted butternut squash with garam masala

This recipe is super simple and delicious. It always calls my name during fall and the cold winter months because of it’s warming spice mixture. The secret ingredient I use here is Garam Masala. Garam masala is a blend of ground spices common in North Indian and South Asian cultures. According to Ayurvedic the word garam means to heat and these spices certainly will warm your body on a cold day! I also like to use Ghee in this recipe as it has a host of health benefits and a much higher smoke point than olive oil so you don’t have to worry about it’s healthy properties breaking down.
Ingredients:
Cubed Butternut Squash
1-2 Tbsp Ghee (depending on how much squash being used)
1 tsp cinnamon
Dash of clove
Dash of nutmeg
1 tsp garam masala
Instructions:
Preheat oven to 350 degrees. In a large mixing bowl toss together the cubed squash along with the melted ghee, cinnamon, clove, nutmeg and masala. Place the squash in a single layer on a baking sheet and bake in the oven for 50-60 minutes until desired tenderness.
