Cooking up roasted beets


I was excited to receive these beets in my weekly @misfitsmarket box. I have never cooked beets, but love roasted veggies so decided to simply roast them. Then with inspiration from @inagarten, I tossed them with a little orange juice, apple cider vinegar, grated ginger, and orange zest. They were delicious by themselves, but also yummy tossed in a kale salad.

Easy Roasted Beets

2 beets, peeled and chopped

Toss with olive oil, salt, and freshly ground pepper

Roast at 4:00 for 15 minutes, toss and cook 15 more minutes

Remove from oven

Toss with about 1 tsp of orange juice, sprinkle of apple cider vinegar and 1/4 tsp grated ginger
